Wine pairings for Spaghetti con Bottarga

This pasta is salty and savory. The best wines to compliment it will be white – and orange – and its most challenging pairings will be red. In fact, the red pairings will be so challenging that I suggest sticking to whites, even sskipping rosatos. This dish is so commanding it’s worth being extra careful.
Unusual combinations of flavors sometimes require equally unusual wines. That often means blends. However, it can also mean wines precisely aged to bring out certain characteristics. Sardegna, from where many of this dish’s ingredients hail, is a home to Vermentino. Whether made in a fresh or an aged style, Vermentino can easily accompany this sea-driven dish. Younger wines can contrast it with their lively floral aromas and aged versions can mimic its savoriness. Wines made in a natural, or even an “orange” style, are perhaps the best off as they maximize the salinity of the dish.
