Wine pairings for Spaghetti all’Astice
Lobster of any sort calls for richer, fuller-bodied wines styles, regardless its seasoning. But, avoid red wine. It systematically adds a metallic note that kills the wine. Whatever your dish, white and rosé call. Still – and frankly – white is the thing. If lobster is the chicken of sea, anything can overtake its flavor. So, choose carefully!
I often recommend wines then mention that you ask for X, Y, and Z if your “local” doesn’t have those wines, you should be well-informed.
On that note, and in the spirit of the idea that if you are reading this column and making these dishes, you should be choosing not only the ingredients just as selectively.

Verdichhio di Castelli di Jesi
Greco di Tufo
