Wine pairings for Paccheri Ripieni di Baccala’ Mantecato
Bianco: Marchetti Verdicchio di Castelli di Jesi, Mario Lucchetti Verdicchio di Castelli di Jesi, Bisci Vermentino di Matellica
White wine makes the best match with fish, which tends to clash dramatically with red wine. Cod makes this recipe salty and saline, so it begs for wines from the seashore. Verdicchio to the rescue!
This pasta is quite light, as is this pasta overall, so it needs a wine at 13% or less in alcohol. Its saline quality means it works best with citrusy fruit flavors. The high acidity of Verdicchio will both cleanse and refresh the palate, and it will work well with the acid-driven addition of tiny tomatoes. If you need to find a substitute, be sure to avoid wines with oak exposure, even if it is older oak. Keep it light and simple!
