Penne con Salsiccia, Pomodorini, e Mozzarella Affumicata (Sausage, Cherry Tomatoes, Smoked Mozzarella)

Ingredients

  • 1 pound penne
  • 2 15 ounce cans Italian cherry tomatoes
  • 1 onion, finely diced
  • 12 ounces Italian sausage, de-cased
  • 1/4 cup olive oil
  • 1 medium smoked mozzarella, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. In a large skillet over medium heat, sauté the onion in olive oil until translucent.
  2. Add the sausage, and crumble with a fork. When cooked through, add the tomatoes, salt and pepper. Simmer for 15 minutes until slightly reduced.
  3. Meanwhile, bring a large pot of salted water to a boil. Cook the pasta until al dente (2 minutes less than the package instructions time). Drain.
  4. Add the pasta to the skillet with the sausage mixture, and add the mozzarella. Mix well.
  5. Serve immediately.

I recently saw the film, Darkest Hour, in which Gary Oldman plays Winston Churchill. Set in England on the brink of WWII, the film makes you understand the meaning of real crisis and real leadership. (I must also admit that I was comforted by Churchill’s reliance on booze, cigars, food, and sarcasm. Whew).

But with yet another inexcusable school shooting, I find it impossible to write a lighthearted intro to this week's Sunday Pasta. It seems that our “Darkest Hour” has slowly crept up on us while our inept politicians fiddle.  This week’s pasta recipe is indeed delicious, but please do me (and all of us) a favor: Gather around the dinner table with family and friends to discuss guns in America. Churchill isn't among us, but the flotilla can still save the day. Use this article as a guide to a non-partisan discussion.   (P.s. The only way we solve the gun problem is with Congressional term limits; we need Churchills, not parasites. Throw the bums out.) Basta! Enough!

  1. If we wish to ‘do’ what the Constitution allowed….1. muskets only to protect family 2. no corruption money for politicians. 3. Will Not Will Not, digress but I think you could guess where this is going.

    I grieve for all of the dead and the families that will never ever fill the hole(s) that people with guns(not muskets to protect) had easy access to other types of weapons. They are terrorists.

  2. Much conversation, emails, Facebook posts, etc., among my California & New York friends about these awful shootings, the bravery of these kids and the insipid b.s. of politicians. And did you hear the NRA Woman accuse journalists of loving this stuff that shows crying white mothers…??? What planet am I on? It is essential to cook & dine & drink wine. Your recipe is a winner.   3. This is why us citizens need to have a gun in our home,( Locked up of course safely). And maybe if one of those people had a gun there it could of been used to stop that fruitcake from this disaster. I know if i had been there & had my gun I would of tried to stop him. Too many of them out there today & I feel we all have a right to protect ourselves as long as we’re not one of them. Maybe feeling this way is the reason I can sit down & relax & enjoy a delicious meal like this while we also say a prayer for the people who suffered &the person who caused it. And your recipe IS A WINNER.

  4. I found some great made in Italy squid ink pasta at my local TJ Maxx. So I Googled squid ink pasta recipes and pulled up yours with shrimp & scallops. It was sooo easy to put together and was excellent , to say the least. Then I went to your website and saw the penne w goat cheese and sun-dried tomatoes and I CANT WAIT to try that. I am Italian and am always looking for new, fresh, healthy and delicious pasta recipes. Thank you .
