Named for the highway crossing the Italian Peninsula’s countryside from Naples to Canosa di Puglia, award-winning A16 brings the distinct tastes of Southern Italy to San Francisco’s Marina neighborhood. The menu focuses on the foodways of Campania, the region encompassing Naples, as well featuring dishes that pay tribute to Lazio, Basilicata, Puglia, and Sicily. From handmade fresh pasta to house-cured salumi, entrées making use of the whole animal, and authentic wood-fired Neapolitan pizza, Executive Chef Christopher Thompson coaxes out the flavors of Southern Italy from Californian ingredients.
Seasonality and locally available ingredients define regional Italian cooking. A16 takes this attitude to heart and frequently updates the menu based on what is available from its network of farmers and purveyors, which coupled with imported specialty items from Italy, allows Chef Christopher Thompson to showcase Southern Italian culinary traditions with California sensibilities. “Our menu celebrates the subtlety of Southern Italian cuisine,” he says. “We look to layer the robust flavors and time-honored techniques of the region and marry that with the bounty of Northern California.”
